The Sugar Rush Continues | Dallas Photographer Baking up a Storm!December 23, 2010These wonderful little treats have quickly become my holiday favorites. I have yet to find anyone who does not adore them, and they are really easy. My best friend Joy (yes the one who is a personal trainer) introduced these to me a few years ago. I quickly fell in LOVE. So here for your viewing pleasure is the process and recipe card using the recipe Joy gave me a few years ago.
First I mix the cake mix (I use dark chocolate cake mix) and cocoa powder. Then I add the oil and eggs.
The batter becomes VERY thick. Here it is about half way through the scooping process.
I use a rounded tablespoon measuring spoon and then roll mine into cute little balls.
They spread and have the most beautiful crackled appearance.
You MUST cool them completely, other wise the filling will just melt and slide right out. For some reason cookies often disappear during the cooling process, so I always make two batches.
They are wonderful anyway you want to enjoy them.
